The Potato Is Back!

My husband subscribes to Men’s Health and there is a chance I read it more than he does! I am glad I do as an article in the most recent issue makes a strong argument for the good, old white potato. I love all potatoes and for years I have felt guilty eating anything other than a sweet potato. But not anymore!  Apparently “the humble potato can be a filling, nutrient-providing component to your meal.” Turns out the story on everything from how the Glycemic Index has been applied to how and when a potato is eaten is more nuanced. So, put potatoes on the menu this week and enjoy them roasted, mashed and steamed.
